The way I approach travel has always been very simple: first time around, do the tourist gig; second time around, do the cultural thing.
The first time I visit anywhere and I can't stay in the same city for more than two weeks, I am the unabashed tourist wearing the Nikes and skinny jeans, frantically running around with camera in hand. But on a second visit, where all those landmarks have been visited, photographed and firmly entrenched in my memory; the little alley ways, the people, the culture is what I'm searching for.
Whilst travelling, I use a Moleskine as a travel journal because it's easier to carry around and scribble in whilst commuting between places and waiting for food/flights. It doesn't help that I'm usually flat-out exhausted by the end of each night, so I'll usually type up my trip reports after returning down under.
